Abstract
Six potsherds from good context at the El Chorro de Maíta site in Holguín, Cuba, were submitted for residue analysis. All the samples contained lipid residue in interpretable condition, suggesting that further residue analysis of sherds from the site would be fruitful, although sunscreen contamination was present in three of the sherds. There was considerable variation among the residues analyzed, but coniferous resin, probably from Pinus sp., was identified in one absorbed residue from a bowl, one visible residue from a bowl, and in small amounts in the ceramic griddle. Most of the residues analyzed were comprised of primarily plant resources with meat resources measurably present. A shallow bowl showed an unusual difference between absorbed and visible residues; the visible residue from this bowl contained many unusual compounds and may represent a single culinary disaster involving a meat stew with pine resin and possible leaves from genus Persea.
