Abstract
- Italy is well known for their locally produced, sustainable agriculture, and for their Mediterranean diet, which is considered one of the healthiest in the world. In the United States, obesity rates among children and adolescents continue to be of great concern, and with the threat of relaxed nutrition requirements for school lunches, many U.S. children could soon see a decline in the nutritional quality of the food they eat. I plan to use an upcoming professional development seminar titled, "A Taste of Ferrara" to infuse my Childhood Obesity, School Health Programs, and Curriculum Development courses with a more global perspective on food culture and eating behaviors among children and families worldwide.
